Gluten free oatmeal cranberry cookies

The perfect afternoon tea treat :)

Ingredients:
  • 210g gluten free flour
  • 1tsp baking soda
  • 75g brown sugar
  • 250g rolled oats
  • 1/2 tsp salt
  • 6 ounces dried cranberries
  • 140g butter
  • 2 eggs
  • 1tsp vanilla

Instructions

  1. Combine all dry ingredients
  2. Combine all wet ingredients
  3. Combine wet and dry ingredients
  4. Using an ice cream scoop, make cookies and press down slightly
  5. Freeze for 15 mins on a baking tray
  6. Bake @350F for 20 minutes
  7. Enjoy!
