gluten free carrot muffins 🥕

The perfect afternoon treat!

Ingredients:

1 cup gf flour

1 tsp baking powder

1/2 tsp baking soda

1/2 cinnamon

1/4 tsp nutmeg

1/4 ginger powder

1/3 cup melted butter (salted)

2 eggs

1/2 cup sugar

1/4 cup yoghurt

1 cup shredded carrots

1/4 golden raisins

 

Method:

  1. Preheat oven to 180C / 350F
  2. Mix dry ingredient (incl. raisins)
  3. Mix wet ingredients (incl. carrots)
  4. Add wet ingredients to dry and mix until combined
  5. Like your muffin tin
  6. Using an ice cream scoop, pour batter into muffin tin
  7. Bake for 18-20 mins until toothpick comes out clean
  8. Let sit for 10 mins
  9. Enjoy 😉
