gluten free carrot muffins 🥕

The perfect afternoon treat!
Ingredients:
1 cup gf flour
1 tsp baking powder
1/2 tsp baking soda
1/2 cinnamon
1/4 tsp nutmeg
1/4 ginger powder
1/3 cup melted butter (salted)
2 eggs
1/2 cup sugar
1/4 cup yoghurt
1 cup shredded carrots
1/4 golden raisins
Method:
- Preheat oven to 180C / 350F
- Mix dry ingredient (incl. raisins)
- Mix wet ingredients (incl. carrots)
- Add wet ingredients to dry and mix until combined
- Like your muffin tin
- Using an ice cream scoop, pour batter into muffin tin
- Bake for 18-20 mins until toothpick comes out clean
- Let sit for 10 mins
